Ingredients
- 4 cups seedless watermelon chunks (about 1 small melon)
- 2 tablespoons fresh lime juice
- 1–2 tablespoons honey or agave syrup (optional)
- 1 tablespoon fresh mint leaves (optional)
- Popsicle molds and sticks
Instructions
- Prep the watermelon – Cut into chunks, removing any seeds.
- Blend – In a blender, combine watermelon, lime juice, and honey/agave (if using). Blend until smooth.
- Optional strain – For smoother popsicles, strain the mixture through a fine mesh sieve.
- Add extras – Stir in finely chopped mint or other fruit if desired.
- Pour into molds – Fill molds, leaving a little space at the top. Insert sticks.
- Freeze – Freeze for 4–6 hours or until solid.
- Unmold & serve – Run molds under warm water for a few seconds before removing popsicles.
Notes
- Choose a very ripe watermelon for maximum sweetness.
- For striped popsicles, freeze one layer of fruit puree at a time.
- If you don’t have molds, use paper cups and wooden sticks.
- Add a little coconut milk for a creamier, tropical flavor.
