Description

Whip up these Easy Weeknight Meatball Subs in under 30 minutes! Juicy meatballs, zesty marinara, and melted cheese come together in toasted rolls for the ultimate quick and comforting dinner.

Ingredients

For the Meatballs:

  • 1 lb cooked or frozen meatballs (beef, turkey, or plant-based)
  • 1 tbsp olive oil
  • 2 cups marinara sauce (homemade or store-bought)
  • 1 tsp garlic powder
  • ½ tsp Italian seasoning
  • Salt and pepper, to taste

For the Subs:

  • 4 large sub rolls or hoagie buns
  • 1 ½ cups shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 1 tbsp butter (for toasting rolls)
  • Fresh parsley or basil, chopped (for garnish)

Instructions

  1. Heat the Meatballs:
In a skillet, heat olive oil over medium heat. Add meatballs and cook until heated through (about 5–7 minutes if pre-cooked).
  2. Add Sauce and Seasoning:
Pour in marinara sauce, garlic powder, Italian seasoning, salt, and pepper. Stir well and simmer for 5 minutes.
  3. Toast the Rolls:
Split the rolls, spread butter on each side, and toast in the oven or skillet until golden brown.
  4. Assemble:
Spoon meatballs and sauce onto each roll. Top with mozzarella and Parmesan cheese.
  5. Melt the Cheese:
Place under the broiler for 1–2 minutes, until cheese is melted and bubbly.
  6. Serve:
Garnish with chopped parsley or basil. Serve hot and enjoy!

Notes

  • Prevent Soggy Bread: Always toast your rolls before adding sauce and meatballs.
  • Cheese Options: Mix mozzarella with provolone or cheddar for extra richness.
  • Make Ahead: Prepare the meatballs and sauce ahead; assemble and broil when ready to serve.
  • Add Veggies: Sautéed peppers, onions, or mushrooms add texture and flavor.
  • Healthier Option: Use turkey or chicken meatballs and whole wheat rolls.
