A soft and tender strawberry cake made with fresh berries and simple ingredients, perfect for a light and flavorful dessert.
Ingredients
- 1½ cups all-purpose flour
- 1½ tsp baking powder
- ½ tsp salt
- 6 tbsp unsalted butter, softened
- 1 cup + 2 tbsp sugar (divided)
- 1 large egg
- 1 tsp vanilla extract
- ½ cup milk
- ¾ lb fresh strawberries, hulled and halved
Instructions
- Preheat oven to 350°F (175°C) and grease a baking pan.
- Whisk flour, baking powder, and salt in a bowl.
- Cream butter and 1 cup sugar until light and fluffy.
- Add egg and vanilla, mix well.
- Alternate adding dry ingredients and milk, mixing gently.
- Pour batter into pan and smooth the top.
- Arrange strawberries on top and sprinkle remaining sugar.
- Bake for 35–40 minutes until golden and set.
- Cool before slicing and serving.
Notes
- Use ripe strawberries for best flavor.
- Do not overmix the batter to keep it soft.
- Add lemon zest for a fresh citrus twist.
