Description

A soft and tender strawberry cake made with fresh berries and simple ingredients, perfect for a light and flavorful dessert.


Ingredients

  • 1½ cups all-purpose flour
  • 1½ tsp baking powder
  • ½ tsp salt
  • 6 tbsp unsalted butter, softened
  • 1 cup + 2 tbsp sugar (divided)
  • 1 large egg
  • 1 tsp vanilla extract
  • ½ cup milk
  • ¾ lb fresh strawberries, hulled and halved


Instructions

  1. Preheat oven to 350°F (175°C) and grease a baking pan.
  2. Whisk flour, baking powder, and salt in a bowl.
  3. Cream butter and 1 cup sugar until light and fluffy.
  4. Add egg and vanilla, mix well.
  5. Alternate adding dry ingredients and milk, mixing gently.
  6. Pour batter into pan and smooth the top.
  7. Arrange strawberries on top and sprinkle remaining sugar.
  8. Bake for 35–40 minutes until golden and set.
  9. Cool before slicing and serving.

Notes

  • Use ripe strawberries for best flavor.
  • Do not overmix the batter to keep it soft.
  • Add lemon zest for a fresh citrus twist.
