Description

A hearty Tex-Mex dish with seasoned ground beef, cabbage, beans, and corn, topped with crunchy Fritos and melted cheddar cheese.


Ingredients

  • 1 pound ground beef
  • 1 packet taco seasoning
  • 4 cups chopped green cabbage
  • 1 cup diced tomatoes
  • 1 cup canned black beans, drained and rinsed
  • 1 cup canned sweet corn, drained
  • 2 cups Fritos corn chips
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup ranch dressing or Southwest-style dressing


Instructions

  1. In a large skillet over medium heat, cook ground beef until browned. Drain excess grease.
  2. Add taco seasoning and a small amount of water as directed. Simmer for a few minutes.
  3. Stir in cabbage, diced tomatoes, black beans, and corn. Cook for 8–10 minutes until cabbage is tender.
  4. Sprinkle shredded cheddar cheese over the mixture and let it melt.
  5. Remove from heat and top with Fritos just before serving.
  6. Drizzle ranch or Southwest dressing over the top and serve warm.

Notes

  • Add Fritos just before serving to keep them crispy.
  • Adjust seasoning or add hot sauce for extra spice.
  • Swap ground beef with turkey or plant-based protein if desired.
