Description
A hearty Tex-Mex dish with seasoned ground beef, cabbage, beans, and corn, topped with crunchy Fritos and melted cheddar cheese.
Ingredients
- 1 pound ground beef
- 1 packet taco seasoning
- 4 cups chopped green cabbage
- 1 cup diced tomatoes
- 1 cup canned black beans, drained and rinsed
- 1 cup canned sweet corn, drained
- 2 cups Fritos corn chips
- 1 1/2 cups shredded cheddar cheese
- 1/2 cup ranch dressing or Southwest-style dressing
Instructions
- In a large skillet over medium heat, cook ground beef until browned. Drain excess grease.
- Add taco seasoning and a small amount of water as directed. Simmer for a few minutes.
- Stir in cabbage, diced tomatoes, black beans, and corn. Cook for 8–10 minutes until cabbage is tender.
- Sprinkle shredded cheddar cheese over the mixture and let it melt.
- Remove from heat and top with Fritos just before serving.
- Drizzle ranch or Southwest dressing over the top and serve warm.
Notes
- Add Fritos just before serving to keep them crispy.
- Adjust seasoning or add hot sauce for extra spice.
- Swap ground beef with turkey or plant-based protein if desired.
