Ingredients
For the Steak and Potatoes
- 1 lb (450g) sirloin steak (or ribeye, strip, or tenderloin)
- 1 lb (450g) baby potatoes, halved
- 3 tablespoons butter, divided
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and black pepper, to taste
- Fresh parsley, chopped (for garnish)
Optional Add-ons
- 1 teaspoon crushed red pepper flakes (for a little heat)
- Fresh rosemary or thyme sprigs
- A squeeze of lemon juice for brightness
Instructions
- Prep the Steak: Remove steak from the fridge and let it rest for 15–20 minutes at room temperature. Pat dry and season both sides with salt, pepper, and Italian seasoning.
- Cook the Potatoes: Heat 1 tablespoon olive oil and 1 tablespoon butter in a large skillet over medium heat. Add potatoes cut-side down, season with salt and pepper, and cook for 6–8 minutes until golden and fork-tender. Remove from skillet and set aside.
- Sear the Steak: In the same skillet, add another tablespoon of olive oil. Increase heat to medium-high and sear the steak for 3–4 minutes per side (depending on thickness). Remove and let it rest under foil.
- Make the Garlic Butter Sauce: Reduce heat to medium. Add 2 tablespoons butter to the skillet, then stir in minced garlic. Cook for 30 seconds until fragrant, scraping up any browned bits.
- Combine and Serve: Add the cooked potatoes back into the skillet, toss in the garlic butter until coated, and return the sliced steak to the pan. Garnish with parsley and serve warm.
