Ingredients

For the Steak and Potatoes

  • 1 lb (450g) sirloin steak (or ribeye, strip, or tenderloin)
  • 1 lb (450g) baby potatoes, halved
  • 3 tablespoons butter, divided
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and black pepper, to taste
  • Fresh parsley, chopped (for garnish)

Optional Add-ons

  • 1 teaspoon crushed red pepper flakes (for a little heat)
  • Fresh rosemary or thyme sprigs
  • A squeeze of lemon juice for brightness


Instructions

  1. Prep the Steak: Remove steak from the fridge and let it rest for 15–20 minutes at room temperature. Pat dry and season both sides with salt, pepper, and Italian seasoning.
  2. Cook the Potatoes: Heat 1 tablespoon olive oil and 1 tablespoon butter in a large skillet over medium heat. Add potatoes cut-side down, season with salt and pepper, and cook for 6–8 minutes until golden and fork-tender. Remove from skillet and set aside.
  3. Sear the Steak: In the same skillet, add another tablespoon of olive oil. Increase heat to medium-high and sear the steak for 3–4 minutes per side (depending on thickness). Remove and let it rest under foil.
  4. Make the Garlic Butter Sauce: Reduce heat to medium. Add 2 tablespoons butter to the skillet, then stir in minced garlic. Cook for 30 seconds until fragrant, scraping up any browned bits.
  5. Combine and Serve: Add the cooked potatoes back into the skillet, toss in the garlic butter until coated, and return the sliced steak to the pan. Garnish with parsley and serve warm.

  • Use Cold Butter: It helps create a rich, thick garlic butter sauce that clings beautifully to the steak and potatoes.
  • Don’t Overcrowd the Pan: Cook in batches if needed to keep the potatoes crisp and the steak seared properly.
