Description

Crispy baked delicata squash coated in garlic, herbs, and breadcrumbs for a flavorful and easy side dish.


Ingredients

  • 1 medium delicata squash (about 3 cups sliced)
  • 1/3 cup panko breadcrumbs
  • 2 tbsp fresh parsley, finely minced (optional)
  • 1 ½ tbsp nutritional yeast (or parmesan cheese)
  • 3/4 tsp dried rosemary
  • 1/23/4 tsp sea salt
  • 3/4 tsp garlic powder
  • 3 tbsp olive oil


Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet.
  2. Slice squash into 1/2-inch pieces, removing seeds.
  3. Mix breadcrumbs, parsley, nutritional yeast, rosemary, salt, and garlic powder.
  4. Toss squash with olive oil.
  5. Coat each slice in breadcrumb mixture.
  6. Arrange on baking sheet in a single layer.
  7. Bake 25–30 minutes, flipping halfway, until golden and crispy.

Notes

  • Don’t overcrowd the pan for better crisping.
  • Use parchment paper to prevent sticking.
  • Serve immediately for best texture.
