Description
Crispy baked delicata squash coated in garlic, herbs, and breadcrumbs for a flavorful and easy side dish.
Ingredients
- 1 medium delicata squash (about 3 cups sliced)
- 1/3 cup panko breadcrumbs
- 2 tbsp fresh parsley, finely minced (optional)
- 1 ½ tbsp nutritional yeast (or parmesan cheese)
- 3/4 tsp dried rosemary
- 1/2–3/4 tsp sea salt
- 3/4 tsp garlic powder
- 3 tbsp olive oil
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet.
- Slice squash into 1/2-inch pieces, removing seeds.
- Mix breadcrumbs, parsley, nutritional yeast, rosemary, salt, and garlic powder.
- Toss squash with olive oil.
- Coat each slice in breadcrumb mixture.
- Arrange on baking sheet in a single layer.
- Bake 25–30 minutes, flipping halfway, until golden and crispy.
Notes
- Don’t overcrowd the pan for better crisping.
- Use parchment paper to prevent sticking.
- Serve immediately for best texture.
