Description

Spook up your Halloween with these Ghost Cheesecake Brownies! Fudgy brownie base, creamy cheesecake swirls, a “bloody” strawberry glaze, and ghostly chocolate truffles make this treat as fun as it is delicious.


Ingredients

For the Brownie Layer

  • 1/2 cup (1 stick) unsalted butter, melted
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/3 cup unsweetened cocoa powder
  • 1/2 cup all-purpose flour
  • 1/4 tsp baking powder
  • 1/4 tsp salt

For the Cheesecake Layer

  • 8 oz (225g) cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1/2 tsp vanilla extract

For the Strawberry Glaze

  • 1/2 cup strawberry jam or puree
  • 2 tbsp powdered sugar
  • 12 tsp lemon juice

For the Ghost Decoration

  • White chocolate truffles (or dome-shaped white candies)
  • Melted dark chocolate (for ghost eyes)


Instructions

Step 1 – Brownie Base

  1. Preheat oven to 350°F (175°C). Line an 8×8-inch (20×20 cm) pan with parchment.
  2. Whisk melted butter and sugar until smooth.
  3. Beat in eggs and vanilla.
  4. Sift in cocoa, flour, baking powder, and salt. Mix until just combined.
  5. Spread 2/3 of the batter into the pan. Reserve the rest.

Step 2 – Cheesecake Layer

  1. Beat cream cheese, sugar, egg, and vanilla until smooth.
  2. Spread evenly over the brownie base.
  3. Dollop remaining brownie batter on top and swirl with a knife.

Step 3 – Bake

  1. Bake 35–40 minutes until set in the center. Cool completely.

Step 4 – Strawberry Glaze

  1. Stir jam, powdered sugar, and lemon juice until smooth.
  2. Spread evenly over cooled brownies.

Step 5 – Ghost Decoration

  1. Place a truffle on each brownie square.
  2. Pipe chocolate eyes to create ghost faces.

Notes

  • Chill the brownies before slicing for clean edges.
  • Use raspberry jam for a darker, spookier glaze.
  • Swap truffles with marshmallows for a lighter ghost.
  • For extra fudginess, slightly underbake the brownies.
