Description

These no-bake Gingerbread Energy Balls are naturally sweet, perfectly spiced, and made with wholesome ingredients like dates, pecans, raisins, and molasses. A festive, healthy snack ready in minutes!


Ingredients

  • ½ cup golden raisins
  • 1 cup warm water (for soaking)
  • 1 cup pecan halves
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground ginger
  • ½ teaspoon allspice
  • ¼ teaspoon ground cloves
  • ¼ teaspoon kosher salt
  • 1 tablespoon blackstrap molasses
  • Granulated sugar, for coating (optional)


Instructions

  1. Place dates and golden raisins in a bowl. Cover with warm water and soak for 10 minutes to soften.
  2. Add pecans to a food processor and pulse until finely chopped, stopping before they turn into nut butter.
  3. Drain the soaked fruit and add dates and raisins to the food processor. Blend until a sticky dough forms.
  4. Add cinnamon, ginger, allspice, cloves, salt, and molasses. Continue processing until the mixture is uniform and holds together when pressed.
  5. Scoop out portions of the dough (about 1 tablespoon each) and roll into smooth balls with your hands.
  6. If desired, roll each energy ball lightly in granulated sugar for a frosted gingerbread look.
  7. Chill for at least 20 minutes to firm up. Store in the refrigerator or freezer.

Notes

  • If your dates are dry, soak them a few extra minutes or add an additional spoonful of water while blending.
  • For a nut-free version, replace pecans with sunflower or pumpkin seeds.
  • Add a teaspoon of orange zest for a bright, festive twist.
  • To prevent sticking, lightly coat your hands with oil before rolling the balls.
