Description

Crispy, cheesy, garlicky, and full of flavor—these grilled cheesy garlic potatoes are the perfect side dish for BBQs, family dinners, or holiday meals. Easy to make and customizable!

Ingredients

  • 4 medium Yukon Gold or Russet potatoes, sliced into rounds
  • 3 cloves garlic, minced
  • 2 tbsp butter (melted) or olive oil
  • 1 ½ cups shredded cheddar cheese (or mozzarella)
  • ½ tsp salt
  • ½ tsp black pepper
  • Fresh parsley or chives, chopped (for garnish)

Optional: bacon bits, sour cream, jalapeños, or extra herbs

Instructions

  1. Prep the potatoes: Wash and slice into even rounds.
  2. Season: Toss with melted butter (or olive oil), garlic, salt, and pepper until coated.
  3. Grill: Preheat grill to medium heat. Cook potatoes in a grill basket, foil packet, or grill pan for 15–20 minutes, flipping occasionally.
  4. Add cheese: During the last 3–5 minutes of grilling, sprinkle shredded cheese over the potatoes. Cover grill until cheese melts.
  5. Serve: Garnish with parsley or chives and serve hot.

Notes

  • Slice potatoes thin for crispier edges.
  • For extra flavor, mix in smoked paprika or red pepper flakes.
  • Use a blend of cheeses for a richer taste.
  • Can also be baked in the oven at 400°F (200°C) for 25–30 minutes.
