Crispy, cheesy, garlicky, and full of flavor—these grilled cheesy garlic potatoes are the perfect side dish for BBQs, family dinners, or holiday meals. Easy to make and customizable!
Ingredients
- 4 medium Yukon Gold or Russet potatoes, sliced into rounds
- 3 cloves garlic, minced
- 2 tbsp butter (melted) or olive oil
- 1 ½ cups shredded cheddar cheese (or mozzarella)
- ½ tsp salt
- ½ tsp black pepper
- Fresh parsley or chives, chopped (for garnish)
Optional: bacon bits, sour cream, jalapeños, or extra herbs
Instructions
- Prep the potatoes: Wash and slice into even rounds.
- Season: Toss with melted butter (or olive oil), garlic, salt, and pepper until coated.
- Grill: Preheat grill to medium heat. Cook potatoes in a grill basket, foil packet, or grill pan for 15–20 minutes, flipping occasionally.
- Add cheese: During the last 3–5 minutes of grilling, sprinkle shredded cheese over the potatoes. Cover grill until cheese melts.
- Serve: Garnish with parsley or chives and serve hot.
Notes
- Slice potatoes thin for crispier edges.
- For extra flavor, mix in smoked paprika or red pepper flakes.
- Use a blend of cheeses for a richer taste.
- Can also be baked in the oven at 400°F (200°C) for 25–30 minutes.
