Ingredients
- 1 lb large shrimp, peeled and deveined (tail-on optional)
- 2 ripe mangos, diced into chunks
- 2 tbsp olive oil
- 2 tbsp lime juice (freshly squeezed)
- 2 cloves garlic, minced
- 1 tbsp honey (optional, for extra caramelization)
- ½ tsp chili flakes or cayenne pepper
- Salt and pepper to taste
- Fresh cilantro, chopped (for garnish)
Instructions
- Prep the Ingredients – Pat shrimp dry with a paper towel. Dice mango into bite-sized chunks.
- Make the Marinade – In a bowl, whisk together olive oil, lime juice, garlic, chili flakes, honey (if using), salt, and pepper.
- Marinate – Add shrimp to the marinade and toss to coat. Let rest for 10–15 minutes.
- Assemble Skewers – Thread shrimp and mango alternately on soaked wooden or metal skewers.
- Grill – Preheat grill to medium-high. Cook skewers for 2–3 minutes per side, until shrimp are pink and slightly charred and mango has grill marks.
- Serve – Garnish with cilantro and a squeeze of lime.
Notes
- Use ripe but firm mango so it doesn’t fall apart on the grill.
- Soak wooden skewers for at least 20 minutes to prevent burning.
