Description

Sweet, smoky, and irresistibly fresh—these Grilled Shrimp & Mango Skewers are the ultimate summer BBQ recipe. Ready in under 30 minutes, they’re perfect for parties, weeknight dinners, or tropical-inspired meals.


Ingredients

  • 1 lb large shrimp, peeled and deveined (tail-on optional)
  • 2 ripe mangos, diced into chunks
  • 2 tbsp olive oil
  • 2 tbsp lime juice (freshly squeezed)
  • 2 cloves garlic, minced
  • 1 tbsp honey (optional, for extra caramelization)
  • ½ tsp chili flakes or cayenne pepper
  • Salt and pepper to taste
  • Fresh cilantro, chopped (for garnish)


Instructions

  1. Prep the Ingredients – Pat shrimp dry with a paper towel. Dice mango into bite-sized chunks.
  2. Make the Marinade – In a bowl, whisk together olive oil, lime juice, garlic, chili flakes, honey (if using), salt, and pepper.
  3. Marinate – Add shrimp to the marinade and toss to coat. Let rest for 10–15 minutes.
  4. Assemble Skewers – Thread shrimp and mango alternately on soaked wooden or metal skewers.
  5. Grill – Preheat grill to medium-high. Cook skewers for 2–3 minutes per side, until shrimp are pink and slightly charred and mango has grill marks.
  6. Serve – Garnish with cilantro and a squeeze of lime.

Notes

  • Use ripe but firm mango so it doesn’t fall apart on the grill.
  • Soak wooden skewers for at least 20 minutes to prevent burning.
  • Don’t overcook shrimp—remove as soon as they turn opaque and curl.
  • Add extra heat with more chili flakes or a drizzle of sriracha before serving.
  • Pair with coconut rice or a fresh cucumber salad for a complete tropical meal.
