Ingredients

  • 8 oz noodles (spaghetti, ramen, or rice noodles)
  • 1 lb ground beef
  • 2 tbsp sesame oil (toasted preferred)
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • ¼ cup soy sauce
  • 2 tbsp hoisin sauce
  • 1 tbsp rice vinegar
  • 2 tbsp brown sugar or honey
  • 2 tbsp peanut butter or tahini
  • 1 tsp chili flakes (optional)
  • 2 green onions, sliced
  • 1 tbsp toasted sesame seeds
  • Salt and pepper, to taste

Optional Add-ins:

  • Shredded carrots, broccoli, or bell peppers
  • Crushed peanuts for garnish
  • A drizzle of chili oil for spice


Instructions

  1. Cook the noodles:
    Boil noodles according to package directions until al dente. Drain, toss with a small amount of sesame oil, and set aside.
  2. Brown the beef:
    In a large skillet or wok, heat sesame oil over medium-high heat. Add ground beef and cook until browned, breaking it apart with a spatula. Season lightly with salt and pepper.
  3. Add aromatics:
    Stir in minced garlic and grated ginger. Cook for 30–45 seconds until fragrant.
  4. Make the sauce:
    In a bowl, whisk together soy sauce, hoisin sauce, rice vinegar, brown sugar, peanut butter, and chili flakes until smooth.
  5. Combine everything:
    Pour the sauce into the skillet with beef. Stir to coat and simmer for 2–3 minutes. Add noodles to the pan and toss until fully coated and heated through.
  6. Serve and garnish:
    Top with green onions, sesame seeds, and optional chili oil or crushed peanuts. Serve warm and enjoy!
