A healthy, comforting one-dish dinner made with ground turkey, zucchini, Italian herbs, and cheese—simple, flavorful, and perfect for meal prep.
Ingredients
- 1 lb ground turkey
- 2 medium zucchinis, sliced
- 1 cup shredded mozzarella cheese
- ½ cup chopped onion
- 2 cloves garlic, minced
- 1 can (14 oz) diced tomatoes, drained
- 1 tsp dried Italian herbs
- ½ tsp salt
- ¼ tsp black pepper
- 1 tbsp olive oil
Instructions
- Preheat oven to 375°F (190°C).
- Sauté onion and garlic in olive oil, then add ground turkey and cook until browned.
- Stir in tomatoes, Italian herbs, salt, and pepper. Simmer 3–5 minutes.
- Layer half the zucchini slices in a greased baking dish, then half the turkey mixture. Repeat layers.
- Top with mozzarella and bake covered for 20 minutes, then uncovered for 10–15 minutes until golden.
Notes
- Pat zucchini dry to reduce moisture.
- Add spinach or mushrooms for extra veggies.
- Swap turkey with ground chicken or beef if desired.
