Description

A healthy, comforting one-dish dinner made with ground turkey, zucchini, Italian herbs, and cheese—simple, flavorful, and perfect for meal prep.


Ingredients

  • 1 lb ground turkey
  • 2 medium zucchinis, sliced
  • 1 cup shredded mozzarella cheese
  • ½ cup chopped onion
  • 2 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes, drained
  • 1 tsp dried Italian herbs
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 tbsp olive oil


Instructions

  1. Preheat oven to 375°F (190°C).
  2. Sauté onion and garlic in olive oil, then add ground turkey and cook until browned.
  3. Stir in tomatoes, Italian herbs, salt, and pepper. Simmer 3–5 minutes.
  4. Layer half the zucchini slices in a greased baking dish, then half the turkey mixture. Repeat layers.
  5. Top with mozzarella and bake covered for 20 minutes, then uncovered for 10–15 minutes until golden.

Notes

  • Pat zucchini dry to reduce moisture.
  • Add spinach or mushrooms for extra veggies.
  • Swap turkey with ground chicken or beef if desired.
