Ingredients
- 8 oz (225 g) halloumi cheese, sliced into thick strips or cubes
- 2 cups cherry tomatoes, halved
- ¼ cup fresh parsley, chopped
- 2 tbsp fresh mint, chopped
- 2 tbsp fresh basil, torn
- 2 tbsp extra virgin olive oil
- 1 tbsp lemon juice, freshly squeezed
- Salt and black pepper, to taste
- (Optional): ½ small red onion, thinly sliced
- (Optional): A pinch of chili flakes or drizzle of hot honey for spice
Instructions
- Prepare the vegetables – Slice cherry tomatoes in halves, chop herbs, and set aside.
- Cook the halloumi – Heat olive oil in a non-stick skillet over medium heat. Add halloumi slices and cook for 1–2 minutes per side until golden and crispy. Remove from the pan and cool slightly.
- Combine ingredients – In a large bowl, toss together tomatoes, herbs, and halloumi.
- Add dressing – Drizzle with olive oil, lemon juice, salt, and pepper. Toss gently to combine.
- Serve immediately – Transfer to a serving dish and garnish with extra herbs or chili flakes if desired.

- Use fresh halloumi — older halloumi can be overly salty and dry.
