Description

Ingredients

  • 8 oz (225 g) halloumi cheese, sliced into thick strips or cubes
  • 2 cups cherry tomatoes, halved
  • ¼ cup fresh parsley, chopped
  • 2 tbsp fresh mint, chopped
  • 2 tbsp fresh basil, torn
  • 2 tbsp extra virgin olive oil
  • 1 tbsp lemon juice, freshly squeezed
  • Salt and black pepper, to taste
  • (Optional): ½ small red onion, thinly sliced
  • (Optional): A pinch of chili flakes or drizzle of hot honey for spice


Instructions

  1. Prepare the vegetables – Slice cherry tomatoes in halves, chop herbs, and set aside.
  2. Cook the halloumi – Heat olive oil in a non-stick skillet over medium heat. Add halloumi slices and cook for 1–2 minutes per side until golden and crispy. Remove from the pan and cool slightly.
  3. Combine ingredients – In a large bowl, toss together tomatoes, herbs, and halloumi.
  4. Add dressing – Drizzle with olive oil, lemon juice, salt, and pepper. Toss gently to combine.
  5. Serve immediately – Transfer to a serving dish and garnish with extra herbs or chili flakes if desired.

  • Use fresh halloumi — older halloumi can be overly salty and dry.
