Description
A light and creamy chicken salad made with yogurt, fresh vegetables, and crunchy nuts for a healthy, protein-packed meal.
Ingredients
- 1 lb cooked chicken, cubed (about 3 cups)
- 3/4 cup celery, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup parsley or dill, chopped (optional)
- 1 cup pecans, almonds, or cashews
- 1/2 cup plain yogurt (2%+ fat)
- 1/4 cup mayonnaise
- 2 tsp Dijon mustard
- 1 tsp vinegar (not balsamic)
- 1/2 tsp salt
- Black pepper, to taste
Instructions
- Add chicken, celery, onion, and herbs to a large bowl.
- In a separate bowl, mix yogurt, mayo, Dijon mustard, vinegar, salt, and pepper.
- Pour dressing over chicken mixture and stir to combine.
- Fold in nuts gently.
- Chill for 20–30 minutes before serving.
Notes
- Use rotisserie chicken for quicker prep.
- Add grapes or dried cranberries for a sweet twist.
- Refresh with extra yogurt if it thickens in the fridge.
