Description

A light and creamy chicken salad made with yogurt, fresh vegetables, and crunchy nuts for a healthy, protein-packed meal.


Ingredients

  • 1 lb cooked chicken, cubed (about 3 cups)
  • 3/4 cup celery, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup parsley or dill, chopped (optional)
  • 1 cup pecans, almonds, or cashews
  • 1/2 cup plain yogurt (2%+ fat)
  • 1/4 cup mayonnaise
  • 2 tsp Dijon mustard
  • 1 tsp vinegar (not balsamic)
  • 1/2 tsp salt
  • Black pepper, to taste


Instructions

  1. Add chicken, celery, onion, and herbs to a large bowl.
  2. In a separate bowl, mix yogurt, mayo, Dijon mustard, vinegar, salt, and pepper.
  3. Pour dressing over chicken mixture and stir to combine.
  4. Fold in nuts gently.
  5. Chill for 20–30 minutes before serving.

Notes

  • Use rotisserie chicken for quicker prep.
  • Add grapes or dried cranberries for a sweet twist.
  • Refresh with extra yogurt if it thickens in the fridge.
