Description
Creamy overnight oats made with coconut milk, Greek yogurt, chia seeds, and maple syrup, topped with toasted coconut flakes and fresh berries for a wholesome, make-ahead breakfast.
Ingredients
- 1 cup rolled oats
- 1 cup full-fat coconut milk
- 1/2 cup Greek yogurt or plant-based yogurt
- 1 tablespoon chia seeds
- 1-2 tablespoons maple syrup
- 1/2 teaspoon vanilla extract
- 1/4 cup toasted coconut flakes
- 1/4 cup fresh berries (optional)
Instructions
- In a bowl or mason jar, combine rolled oats, chia seeds, coconut milk, Greek yogurt, maple syrup, and vanilla extract. Stir until well mixed.
- Cover and refrigerate overnight, or at least 4 hours, until oats soften and thicken.
- Toast coconut flakes in a dry skillet over medium heat until golden.
- In the morning, stir oats and top with toasted coconut flakes and fresh berries. Optionally drizzle extra maple syrup.
Notes
- Pat fresh berries dry to avoid excess moisture.
- Store overnight oats in airtight jars for up to 3 days.
- Add nuts or seeds before serving for extra crunch.
