Description
Crispy hot honey chicken sandwich with Greek yogurt slaw and cornflake crust for a high protein twist. Perfect healthy lunch or dinner idea.
Ingredients
Chicken:
- 2 large chicken breasts, sliced into 4 cutlets
- 1 large egg
- 1 cup crushed cornflakes
- 1/2 teaspoon cayenne pepper
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper, to taste
- Olive oil spray
Slaw:
- 1 bag coleslaw mix
- 1 cup Greek yogurt
- 2 tablespoons avocado oil mayo
- Juice of 1 lemon
- 1 teaspoon dried parsley
- 1 teaspoon dried chives
- 1 teaspoon dried dill
- 1 teaspoon onion powder
- 1 teaspoon salt
For Serving:
- Pickles
- Hot honey
- 4 buns
Instructions
- Preheat oven to 400°F or air fryer to 375°F.
- Season chicken with salt and pepper.
- Whisk egg in one bowl; mix cornflakes and spices in another.
- Dip chicken in egg, then coat in cornflake mixture.
- Spray lightly with oil and bake 18–22 minutes or air fry 12–15 minutes until 165°F internal temperature.
- Mix slaw dressing ingredients and toss with coleslaw mix.
- Assemble sandwiches with slaw, chicken, hot honey, and pickles.
Notes
- Slice chicken evenly for uniform cooking.
- Lightly spray crumbs to enhance browning.
- Let chicken rest 5 minutes before assembling.
