Description

Crispy hot honey chicken sandwich with Greek yogurt slaw and cornflake crust for a high protein twist. Perfect healthy lunch or dinner idea.


Ingredients

Chicken:

  • 2 large chicken breasts, sliced into 4 cutlets
  • 1 large egg
  • 1 cup crushed cornflakes
  • 1/2 teaspoon cayenne pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper, to taste
  • Olive oil spray

Slaw:

  • 1 bag coleslaw mix
  • 1 cup Greek yogurt
  • 2 tablespoons avocado oil mayo
  • Juice of 1 lemon
  • 1 teaspoon dried parsley
  • 1 teaspoon dried chives
  • 1 teaspoon dried dill
  • 1 teaspoon onion powder
  • 1 teaspoon salt

For Serving:

  • Pickles
  • Hot honey
  • 4 buns


Instructions

  1. Preheat oven to 400°F or air fryer to 375°F.
  2. Season chicken with salt and pepper.
  3. Whisk egg in one bowl; mix cornflakes and spices in another.
  4. Dip chicken in egg, then coat in cornflake mixture.
  5. Spray lightly with oil and bake 18–22 minutes or air fry 12–15 minutes until 165°F internal temperature.
  6. Mix slaw dressing ingredients and toss with coleslaw mix.
  7. Assemble sandwiches with slaw, chicken, hot honey, and pickles.

Notes

  • Slice chicken evenly for uniform cooking.
  • Lightly spray crumbs to enhance browning.
  • Let chicken rest 5 minutes before assembling.
