Description

Warm up with this hearty potato stew! A simple, comforting recipe packed with tender potatoes, vegetables, and savory broth. Perfect for family dinners or cozy nights.

Ingredients

  • 4 large potatoes, peeled and diced
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 4 cups vegetable or chicken broth
  • 1 cup milk or cream (optional for creaminess)
  • 2 tablespoons olive oil or butter
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • Salt and pepper, to taste

Optional Add-ins:

  • 1 cup cooked sausage, chicken, or ham
  • 1 cup frozen peas or green beans
  • A pinch of smoked paprika for extra flavor

Instructions

  1. Heat olive oil or butter in a large pot over medium heat.
  2. Add onion, carrots, and celery. Sauté until softened, about 5 minutes. Stir in garlic.
  3. Add diced potatoes, broth, thyme, parsley, salt, and pepper. Stir well.
  4. Cover and simmer for 20–25 minutes, until potatoes are fork-tender.
  5. Stir in milk or cream (if using) for added richness. Mash a few potatoes in the pot to thicken the stew naturally.
  6. Add any optional extras like peas or sausage, then simmer for another 5 minutes.
  7. Serve hot with crusty bread or fresh herbs on top.

Notes

  • Use Yukon Gold or Russet potatoes for the best texture.
  • Mash a few potatoes directly in the pot to thicken without flour.
  • Add leafy greens like spinach or kale for extra nutrition.
  • Make it ahead of time—the flavors develop beautifully overnight.
  • Freeze in single portions for quick, ready-to-go meals.
