- 1 large onion, diced
- 3 cloves garlic, minced
- 4 cups vegetable or chicken broth
- 1 cup milk or cream (optional for creaminess)
- 2 tablespoons olive oil or butter
- 1 teaspoon dried thyme
- 1 teaspoon dried parsley
- Salt and pepper, to taste
Optional Add-ins:
- 1 cup cooked sausage, chicken, or ham
- 1 cup frozen peas or green beans
- A pinch of smoked paprika for extra flavor
Instructions
- Heat olive oil or butter in a large pot over medium heat.
- Add onion, carrots, and celery. Sauté until softened, about 5 minutes. Stir in garlic.
- Add diced potatoes, broth, thyme, parsley, salt, and pepper. Stir well.
- Cover and simmer for 20–25 minutes, until potatoes are fork-tender.
- Stir in milk or cream (if using) for added richness. Mash a few potatoes in the pot to thicken the stew naturally.
- Add any optional extras like peas or sausage, then simmer for another 5 minutes.
- Serve hot with crusty bread or fresh herbs on top.
Notes
- Use Yukon Gold or Russet potatoes for the best texture.
- Mash a few potatoes directly in the pot to thicken without flour.
- Add leafy greens like spinach or kale for extra nutrition.
- Make it ahead of time—the flavors develop beautifully overnight.
