Description

A soft, single-serve cinnamon roll mug cake made with protein powder and topped with a light cream cheese glaze, ready in minutes.


Ingredients

Mug Cake

  • 1/4 cup vanilla protein powder
  • 2 tablespoons oat flour
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon ground cinnamon
  • 1 tablespoon granulated sweetener
  • Pinch of salt
  • 3 tablespoons milk
  • 1 large egg white
  • 1/2 teaspoon vanilla extract
  • 1/2 tablespoon melted butter or coconut oil

Cinnamon Swirl

  • 1 tablespoon brown sugar or coconut sugar
  • 1/2 teaspoon ground cinnamon

Glaze

  • 1 1/2 tablespoons light cream cheese, softened
  • 1 teaspoon milk
  • 1/2 tablespoon powdered sweetener or sugar
  • 1/4 teaspoon vanilla extract


Instructions

  1. Lightly grease a microwave-safe mug.
  2. Mix protein powder, oat flour, baking powder, cinnamon, sweetener, and salt in the mug.
  3. Stir in milk, egg white, vanilla, and melted butter until smooth.
  4. Mix brown sugar and cinnamon, sprinkle on top, and swirl gently into batter.
  5. Microwave 60–90 seconds until just set.
  6. Mix glaze ingredients until smooth and drizzle over warm cake. Serve immediately.

Notes

  • Do not overcook to keep texture soft
