A soft, single-serve cinnamon roll mug cake made with protein powder and topped with a light cream cheese glaze, ready in minutes.
Ingredients
Mug Cake
- 1/4 cup vanilla protein powder
- 2 tablespoons oat flour
- 1/4 teaspoon baking powder
- 1/4 teaspoon ground cinnamon
- 1 tablespoon granulated sweetener
- Pinch of salt
- 3 tablespoons milk
- 1 large egg white
- 1/2 teaspoon vanilla extract
- 1/2 tablespoon melted butter or coconut oil
Cinnamon Swirl
- 1 tablespoon brown sugar or coconut sugar
- 1/2 teaspoon ground cinnamon
Glaze
- 1 1/2 tablespoons light cream cheese, softened
- 1 teaspoon milk
- 1/2 tablespoon powdered sweetener or sugar
- 1/4 teaspoon vanilla extract
Instructions
- Lightly grease a microwave-safe mug.
- Mix protein powder, oat flour, baking powder, cinnamon, sweetener, and salt in the mug.
- Stir in milk, egg white, vanilla, and melted butter until smooth.
- Mix brown sugar and cinnamon, sprinkle on top, and swirl gently into batter.
- Microwave 60–90 seconds until just set.
- Mix glaze ingredients until smooth and drizzle over warm cake. Serve immediately.
Notes
- Do not overcook to keep texture soft
- Adjust milk slightly if batter seems too thick
