Description
Juicy grilled chicken skewers coated in a bold honey chipotle marinade with hints of orange and smoky adobo. A quick, flavor-packed meal perfect for weeknight dinners or weekend cookouts.
Ingredients
- 1 pound chicken breasts, cut into bite-sized pieces
- Wood skewers (optional)
- 1½ tablespoon honey
- 1 chipotle pepper in adobo, minced
- 1 clove garlic, grated
- 2 tablespoons taco seasoning
- 1 orange, zest and juice (1–2 tsp zest + 1 tbsp juice)
- ½ teaspoon kosher salt
- 1 tablespoon avocado oil
Instructions
- If using wooden skewers, soak them in water for at least 20 minutes before grilling.
- In a large bowl, whisk together honey, minced chipotle pepper, grated garlic, taco seasoning, orange zest, orange juice, kosher salt, and avocado oil.
- Add the chicken pieces to the marinade and toss to coat evenly. Let marinate for at least 10 minutes (or up to 2 hours in the fridge).
- Thread the marinated chicken onto skewers.
- Preheat grill or grill pan over medium-high heat. Lightly oil the grates.
- Grill skewers for 5–7 minutes per side, until chicken is cooked through and slightly charred.
- Remove from heat and let rest for 2 minutes. Serve immediately.
