Ingredients
- 1½ lbs Italian sausage links (sweet or hot)
- 2 tbsp olive oil
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 yellow bell pepper, sliced
- 2 medium onions, thinly sliced
- 3 cloves garlic, minced
- 1 (14-oz) can diced tomatoes
- 2 tbsp tomato paste
- ½ cup dry white wine (or chicken broth)
- 1 tsp Italian seasoning
- ½ tsp crushed red pepper flakes (optional)
- Salt and black pepper, to taste
- Fresh basil or parsley, chopped, for garnish

Instructions
- Brown the Sausages:
Heat olive oil in a large skillet over medium heat. Add sausage links and cook until browned on all sides, about 5–7 minutes. Remove from the pan and set aside. - Sauté the Vegetables:
In the same skillet, add sliced peppers and onions. Cook until softened and caramelized, about 10 minutes. Add garlic and cook for another 30 seconds until fragrant. - Deglaze and Add Sauce:
Pour in white wine (or broth) to deglaze the pan, scraping up any browned bits. Add diced tomatoes, tomato paste, Italian seasoning, red pepper flakes, salt, and black pepper. Stir to combine. - Simmer with Sausages:
Return sausages to the pan, cover, and simmer for 15–20 minutes until sausages are fully cooked and sauce thickens slightly. - Serve:
