Description

A traditional Southern candy with a creamy texture, made by pulling a cooked sugar mixture until light and smooth.


Ingredients

For the Candy:

  • 2 cups granulated sugar
  • 1 cup heavy cream
  • 1/2 cup light corn syrup
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract

For Preparation:

  • 1 tablespoon butter (for greasing hands and surface)


Instructions

  1. Grease a clean surface and your hands with butter.
  2. Combine sugar, cream, corn syrup, and salt in a saucepan.
  3. Cook over medium heat, stirring until dissolved, then boil without stirring.
  4. Heat until mixture reaches 260°F (hard ball stage).
  5. Remove from heat and stir in vanilla extract.
  6. Pour onto prepared surface and cool slightly.
  7. Pull candy with buttered hands until lighter and firm.
  8. Shape into ropes and cut into small pieces.
  9. Let cool completely before serving.

Notes

  • Use a candy thermometer for accuracy.
  • Work quickly once the candy is cool enough to handle.
  • Avoid humid conditions to prevent stickiness.
