Description
A traditional Southern candy with a creamy texture, made by pulling a cooked sugar mixture until light and smooth.
Ingredients
For the Candy:
- 2 cups granulated sugar
- 1 cup heavy cream
- 1/2 cup light corn syrup
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
For Preparation:
- 1 tablespoon butter (for greasing hands and surface)
Instructions
- Grease a clean surface and your hands with butter.
- Combine sugar, cream, corn syrup, and salt in a saucepan.
- Cook over medium heat, stirring until dissolved, then boil without stirring.
- Heat until mixture reaches 260°F (hard ball stage).
- Remove from heat and stir in vanilla extract.
- Pour onto prepared surface and cool slightly.
- Pull candy with buttered hands until lighter and firm.
- Shape into ropes and cut into small pieces.
- Let cool completely before serving.
Notes
- Use a candy thermometer for accuracy.
- Work quickly once the candy is cool enough to handle.
- Avoid humid conditions to prevent stickiness.
