Description

Crispy cheese roll-ups filled with corned beef, sauerkraut, and a creamy keto-friendly Reuben sauce for a low carb appetizer or snack.


Ingredients

  • 2 cups shredded Swiss cheese
  • ½ pound sliced corned beef deli meat
  • 1 cup sauerkraut, drained well
  • ¼ cup mayonnaise
  • 1 teaspoon Worcestershire sauce
  • 1½ tablespoons sugar-free ketchup
  • 2 teaspoons Swerve Confectioner’s sugar substitute
  • 1 tablespoon horseradish sauce
  • 1 pinch paprika


Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Place small piles of shredded Swiss cheese onto the sheet, spreading each into a thin circle.
  3. Bake 5–7 minutes until melted and lightly golden around the edges.
  4. Mix mayonnaise, Worcestershire sauce, sugar-free ketchup, Swerve, and horseradish sauce in a bowl.
  5. Pat sauerkraut dry to remove excess moisture.
  6. Add corned beef, sauerkraut, and a small spoonful of sauce to each cheese round.
  7. Roll carefully while cheese is still flexible.
  8. Return to oven for 2–3 minutes if needed to crisp further. Sprinkle with paprika before serving.

  • Drain sauerkraut thoroughly to keep roll-ups crisp
  • Work quickly while cheese is still warm and pliable
