Description
Crispy cheese roll-ups filled with corned beef, sauerkraut, and a creamy keto-friendly Reuben sauce for a low carb appetizer or snack.
Ingredients
- 2 cups shredded Swiss cheese
- ½ pound sliced corned beef deli meat
- 1 cup sauerkraut, drained well
- ¼ cup mayonnaise
- 1 teaspoon Worcestershire sauce
- 1½ tablespoons sugar-free ketchup
- 2 teaspoons Swerve Confectioner’s sugar substitute
- 1 tablespoon horseradish sauce
- 1 pinch paprika
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Place small piles of shredded Swiss cheese onto the sheet, spreading each into a thin circle.
- Bake 5–7 minutes until melted and lightly golden around the edges.
- Mix mayonnaise, Worcestershire sauce, sugar-free ketchup, Swerve, and horseradish sauce in a bowl.
- Pat sauerkraut dry to remove excess moisture.
- Add corned beef, sauerkraut, and a small spoonful of sauce to each cheese round.
- Roll carefully while cheese is still flexible.
- Return to oven for 2–3 minutes if needed to crisp further. Sprinkle with paprika before serving.
Notes
- Drain sauerkraut thoroughly to keep roll-ups crisp
- Work quickly while cheese is still warm and pliable
- Reheat in air fryer or oven for best texture
