Description
A low-carb, one-skillet version of the classic Reuben sandwich—complete with melty cheese, tender corned beef, and creamy Russian dressing.
Ingredients
For the Bowl:
- 1 bag coleslaw mix (about 10–12 oz)
- 1 pound corned beef, sliced into strips
- 2–3 tablespoons butter
- 1 cup Swiss cheese, shredded or chopped
- Scallions, chopped (for garnish)
For the Russian Dressing:
- 1 cup mayonnaise
- 1/4 cup sugar-free ketchup
- 4 teaspoons horseradish
- 1 teaspoon hot sauce
- 1 teaspoon Worcestershire sauce
- 1/2 teaspoon salt
- Pinch of black pepper
Instructions
- In a small bowl, whisk together all dressing ingredients. Set aside.
- In a large skillet, melt butter over medium heat. Sauté coleslaw mix for 4–5 minutes until softened.
- Add corned beef and cook for 2–3 more minutes until heated through.
- Sprinkle Swiss cheese over the mixture, cover, and let melt for 2 minutes.
- Drizzle with Russian dressing and garnish with chopped scallions before serving.
Notes
- Use deli-sliced corned beef for convenience.
- Store dressing separately if prepping ahead.
- Add sauerkraut for extra tang if desired.
