Ingredients

- 2 cups almond milk (or milk of choice)
- 1/4 cup fresh lemon juice

- 2–3 tbsp maple syrup or honey
- 1/2 tsp vanilla extract
- 1/4 cup Greek yogurt or coconut cream (optional)
Instructions
- Whisk almond milk, lemon juice, zest, maple syrup, and vanilla until combined.
- Stir in Greek yogurt or coconut cream if using.
- Gradually whisk in chia seeds.
- Rest 5 minutes, then whisk again to prevent clumping.
- Cover and refrigerate at least 2 hours or overnight.
