Description
Creamy baked russet potatoes filled with seasoned shrimp, crab, melted cheddar cheese, and Cajun spices, baked until golden and comforting.
Ingredients
- 4 large russet potatoes
- 1 cup cooked shrimp, chopped
- 1 cup cooked crab meat or seafood blend, chopped
- 2 tablespoons unsalted butter
- 1/2 cup whole milk or heavy cream
- 1/2 cup sour cream
- 1 cup shredded cheddar cheese, divided
- 1 teaspoon Cajun seasoning
- 1/2 teaspoon garlic powder
- 1/2 teaspoon paprika
- Salt, to taste
- Freshly ground black pepper, to taste
- Sliced green onions or chopped parsley, optional
Instructions
- Preheat oven to 400°F (200°C). Scrub potatoes, pierce with a fork, and bake for 50–60 minutes until tender.
- Cool slightly, then cut potatoes lengthwise and scoop out flesh into a bowl, leaving skins intact.
- Add butter to warm potato flesh and mash until melted. Stir in milk, sour cream, Cajun seasoning, garlic powder, paprika, salt, and pepper.
- Gently fold in shrimp, crab, and half of the cheddar cheese.
- Spoon mixture back into potato skins and place on a baking sheet.
- Top with remaining cheese and bake for 15–20 minutes until melted and lightly golden.
- Garnish with green onions or parsley before serving.

- Use freshly grated cheese for better melting and flavor.
- Adjust Cajun seasoning to control spice level.
