Description

Creamy baked russet potatoes filled with seasoned shrimp, crab, melted cheddar cheese, and Cajun spices, baked until golden and comforting.


Ingredients

  • 4 large russet potatoes
  • 1 cup cooked shrimp, chopped
  • 1 cup cooked crab meat or seafood blend, chopped
  • 2 tablespoons unsalted butter
  • 1/2 cup whole milk or heavy cream
  • 1/2 cup sour cream
  • 1 cup shredded cheddar cheese, divided
  • 1 teaspoon Cajun seasoning
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • Sliced green onions or chopped parsley, optional


Instructions

  1. Preheat oven to 400°F (200°C). Scrub potatoes, pierce with a fork, and bake for 50–60 minutes until tender.
  2. Cool slightly, then cut potatoes lengthwise and scoop out flesh into a bowl, leaving skins intact.
  3. Add butter to warm potato flesh and mash until melted. Stir in milk, sour cream, Cajun seasoning, garlic powder, paprika, salt, and pepper.
  4. Gently fold in shrimp, crab, and half of the cheddar cheese.
  5. Spoon mixture back into potato skins and place on a baking sheet.
  6. Top with remaining cheese and bake for 15–20 minutes until melted and lightly golden.
  7. Garnish with green onions or parsley before serving.

  • Use freshly grated cheese for better melting and flavor.
