Ingredients

  • 8 slices bacon, diced
  • 4 cups all-purpose flour
  • 1 cup shredded extra-sharp cheddar cheese
  • 4 teaspoons baking powder
  • 1 ½ teaspoons kosher salt
  • 1 teaspoon baking soda
  • ¾ cup unsalted butter, frozen
  • 1 ½ cups cold buttermilk
  • 6 tablespoons maple syrup, divided
  • 2 tablespoons melted unsalted butter


Instructions

  1. Preheat oven to 425°F and line a baking sheet with parchment paper.
  2. Cook diced bacon until crisp; drain and cool completely.
  3. Whisk flour, baking powder, salt, and baking soda in a large bowl.
  4. Grate frozen butter into flour mixture and cut in until coarse crumbs form.
  5. Stir in cheddar and bacon.
  6. Mix buttermilk with 4 tablespoons maple syrup; gently combine with dry ingredients.
  7. Pat dough to 1-inch thickness, fold three times, and cut biscuits.
  8. Bake 18–22 minutes until golden brown.
  9. Brush with melted butter mixed with remaining maple syrup and serve warm.
