Ingredients
For the Chicken Marinade:
- 2 large boneless, skinless chicken breasts (about 1 lb)
- 2 tbsp Dijon mustard
- 2 tbsp pure maple syrup
- 1 tbsp olive oil
- 1 garlic clove, minced
- 1 tbsp apple cider vinegar or lemon juice
- 1/2 tsp salt
- 1/4 tsp black pepper
For the Roasted Sweet Potatoes:
- 2 medium sweet potatoes, peeled and cubed
- 1 tbsp olive oil
- 1/2 tsp smoked paprika
- 1/2 tsp salt
- Freshly ground pepper, to taste
For the Bowls:
- 2 cups cooked quinoa or brown rice
- 1 cup baby spinach or kale
- 1/4 cup toasted pecans or walnuts
- Optional toppings: goat cheese crumbles, dried cranberries, or avocado slices
Instructions
- Marinate the Chicken: Whisk together Dijon mustard, maple syrup, olive oil, garlic, apple cider vinegar (or lemon juice), salt, and pepper. Marinate the chicken in the mixture for at least 30 minutes, or up to 2 hours.
- Roast the Sweet Potatoes: Preheat your oven to 400°F (200°C). Cube the sweet potatoes and toss with olive oil, smoked paprika, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes, or until tender and golden.
- Cook the Quinoa: Prepare quinoa or brown rice according to the package instructions.
- Cook the Chicken: Heat a skillet over medium heat. Remove chicken from marinade and cook for 5-7 minutes per side until the internal temperature reaches 165°F (74°C). Let the chicken rest for 5 minutes before slicing.
- Assemble the Bowls: In each bowl, add a serving of quinoa or rice, spinach or kale, roasted sweet potatoes, and sliced chicken. Top with toasted nuts and any optional toppings like goat cheese or avocado slices.
- Serve and Enjoy: Drizzle with any remaining marinade or a little extra maple syrup for added flavor.
Notes
- You can use other leafy greens like arugula or mixed greens if you prefer.
- Make it vegan by swapping chicken for roasted tofu or chickpeas.
