Ingredients
- 2 cups hummus (store-bought or homemade)
- 1 small cucumber, diced
- ½ cup Kalamata olives, blotted dry, pitted, and chopped
- 8 oz roasted red peppers, blotted dry and chopped
- 4 oz feta cheese, crumbled
- 1 cup cherry tomatoes, halved or quartered
- ¼ cup red onion, finely diced
- Fresh dill (optional, for garnish)
- Extra-virgin olive oil (for drizzling)
- Whole wheat pita chips, for serving
Instructions
- Spread the hummus evenly into the bottom of a shallow serving dish.
- Sprinkle diced cucumber evenly over the hummus.
- Add the chopped roasted red peppers in an even layer.
- Top with cherry tomatoes.
- Add the chopped Kalamata olives.
- Sprinkle finely diced red onion over the top.
- Add crumbled feta cheese as the final layer.
- Drizzle lightly with extra-virgin olive oil and garnish with fresh dill if desired.
- Serve with pita chips or raw veggies and enjoy!
