Description

A fresh and flavorful Mediterranean Seven Layer Dip made with hummus, cucumbers, tomatoes, roasted red peppers, olives, feta, and herbs. A quick, healthy, no-bake appetizer perfect for parties, potlucks, and holiday gatherings!


Ingredients

  • 2 cups hummus (store-bought or homemade)
  • 1 small cucumber, diced
  • ½ cup Kalamata olives, blotted dry, pitted, and chopped
  • 8 oz roasted red peppers, blotted dry and chopped
  • 4 oz feta cheese, crumbled
  • 1 cup cherry tomatoes, halved or quartered
  • ¼ cup red onion, finely diced
  • Fresh dill (optional, for garnish)
  • Extra-virgin olive oil (for drizzling)
  • Whole wheat pita chips, for serving


Instructions

  1. Spread the hummus evenly into the bottom of a shallow serving dish.
  2. Sprinkle diced cucumber evenly over the hummus.
  3. Add the chopped roasted red peppers in an even layer.
  4. Top with cherry tomatoes.
  5. Add the chopped Kalamata olives.
  6. Sprinkle finely diced red onion over the top.
  7. Add crumbled feta cheese as the final layer.
  8. Drizzle lightly with extra-virgin olive oil and garnish with fresh dill if desired.
  9. Serve with pita chips or raw veggies and enjoy!

  • Blot olives, roasted peppers, and cucumbers dry to prevent excess moisture.
