Description

Creamy, cheesy, and irresistibly rich, these Million Dollar Chicken Alfredo Stuffed Shells are the ultimate comfort food! Filled with tender chicken, ricotta, and a luscious Alfredo sauce.

Ingredients

For the Filling:

  • 20 jumbo pasta shells (cooked al dente)
  • 2 cups shredded cooked chicken (rotisserie or boiled)
  • 8 oz cream cheese (softened)
  • 1 cup ricotta cheese
  • 1½ cups shredded mozzarella cheese (divided)
  • ½ cup grated Parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • Salt and pepper, to taste

For the Alfredo Sauce:

  • 4 tbsp unsalted butter
  • 2 cups heavy cream
  • 1 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tbsp chopped parsley (optional)

Instructions

  1. Cook the Pasta:
Boil the jumbo shells in salted water until al dente. Drain and rinse with cool water to prevent sticking.
  2. Prepare the Filling:
In a large bowl, combine shredded chicken, cream cheese, ricotta, half of the mozzarella, Parmesan, garlic powder, Italian seasoning, salt, and pepper. Mix well until creamy and evenly blended.
  3. Make the Alfredo Sauce:
In a saucepan, melt butter over medium heat. Add garlic and sauté for 1 minute until fragrant. Stir in heavy cream and let it simmer for 3–4 minutes. Whisk in Parmesan cheese until smooth and thick.
  4. Assemble:
Spread a thin layer of Alfredo sauce on the bottom of a baking dish. Stuff each pasta shell with the chicken mixture and place in the dish. Pour remaining sauce over the top, then sprinkle with leftover mozzarella.
  5. Bake:
Cover with foil and bake at 375°F (190°C) for 25 minutes. Remove foil and bake uncovered for 10–15 more minutes, until golden and bubbly.
  6. Serve:
Garnish with chopped parsley and extra Parmesan. Serve warm and enjoy!

Notes

  • Don’t overcook the pasta—al dente shells hold their shape better when stuffed.
  • Use rotisserie chicken for convenience and added flavor.
  • Add a handful of spinach or crispy bacon bits for a fun twist.
  • To save time, use store-bought Alfredo sauce—but enhance it with a bit of garlic and Parmesan.
  • For easy cleanup, line your baking dish with foil or parchment paper.
