Ingredients
For the Filling:
- 20 jumbo pasta shells (cooked al dente)
- 2 cups shredded cooked chicken (rotisserie or boiled)
- 8 oz cream cheese (softened)
- 1 cup ricotta cheese
- 1½ cups shredded mozzarella cheese (divided)
- ½ cup grated Parmesan cheese
- 1 tsp garlic powder
- 1 tsp Italian seasoning
- Salt and pepper, to taste
For the Alfredo Sauce:
- 4 tbsp unsalted butter
- 2 cups heavy cream
- 1 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 tbsp chopped parsley (optional)
Instructions
- Cook the Pasta:
Boil the jumbo shells in salted water until al dente. Drain and rinse with cool water to prevent sticking. - Prepare the Filling:
In a large bowl, combine shredded chicken, cream cheese, ricotta, half of the mozzarella, Parmesan, garlic powder, Italian seasoning, salt, and pepper. Mix well until creamy and evenly blended. - Make the Alfredo Sauce:
In a saucepan, melt butter over medium heat. Add garlic and sauté for 1 minute until fragrant. Stir in heavy cream and let it simmer for 3–4 minutes. Whisk in Parmesan cheese until smooth and thick. - Assemble:
Spread a thin layer of Alfredo sauce on the bottom of a baking dish. Stuff each pasta shell with the chicken mixture and place in the dish. Pour remaining sauce over the top, then sprinkle with leftover mozzarella. - Bake:
Cover with foil and bake at 375°F (190°C) for 25 minutes. Remove foil and bake uncovered for 10–15 more minutes, until golden and bubbly. - Serve:
Garnish with chopped parsley and extra Parmesan. Serve warm and enjoy!
Notes
- Don’t overcook the pasta—al dente shells hold their shape better when stuffed.
- Use rotisserie chicken for convenience and added flavor.
- Add a handful of spinach or crispy bacon bits for a fun twist.
- To save time, use store-bought Alfredo sauce—but enhance it with a bit of garlic and Parmesan.
- For easy cleanup, line your baking dish with foil or parchment paper.
