Description

Soft, chewy Mini Reese’s Pieces Cookies Stuffed with Peanut Butter are the ultimate treat! Colorful, fun, and packed with peanut butter flavor, these bite-sized cookies are perfect for parties, holidays, or everyday snacking.


Ingredients

  • 1 ½ cups all-purpose flour
  • ½ tsp baking soda
  • ½ tsp baking powder
  • ¼ tsp salt
  • ½ cup unsalted butter, softened
  • ½ cup brown sugar, packed
  • ¼ cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • ¾ cup Reese’s Pieces candy
  • ½ cup creamy peanut butter (for stuffing, freeze in small scoops first)


Instructions

  1. Line a baking sheet with parchment paper. Scoop teaspoons of peanut butter onto the tray and freeze for 20–30 minutes.
  2. In a medium bowl, whisk together flour, baking soda, baking powder, and salt. Set aside.
  3. In a large mixing bowl, cream butter, brown sugar, and granulated sugar until fluffy.
  4. Beat in the egg and vanilla extract.
  5. Gradually add dry ingredients into the wet mixture until combined.
  6. Fold in Reese’s Pieces.
  7. Scoop a tablespoon of cookie dough, flatten it, and place a frozen peanut butter scoop in the center. Wrap the dough around it to form a ball.
  8. Place cookie balls onto a lined baking sheet.
  9. Bake at 350°F (175°C) for 9–11 minutes, until golden at the edges.
  10. Cool for 5 minutes before transferring to a wire rack. Serve warm or store for later.

Notes

  • Freeze the peanut butter filling before stuffing to prevent leaking.
  • Add extra Reese’s Pieces on top before baking for a prettier finish.
  • For softer cookies, slightly underbake and let them finish setting on the tray.
  • Store with a slice of bread in your container to keep cookies soft longer.
