Soft, chewy Mini Reese’s Pieces Cookies Stuffed with Peanut Butter are the ultimate treat! Colorful, fun, and packed with peanut butter flavor, these bite-sized cookies are perfect for parties, holidays, or everyday snacking.
Ingredients
- 1 ½ cups all-purpose flour
- ½ tsp baking soda
- ½ tsp baking powder
- ¼ tsp salt
- ½ cup unsalted butter, softened
- ½ cup brown sugar, packed
- ¼ cup granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- ¾ cup Reese’s Pieces candy
- ½ cup creamy peanut butter (for stuffing, freeze in small scoops first)
Instructions
- Line a baking sheet with parchment paper. Scoop teaspoons of peanut butter onto the tray and freeze for 20–30 minutes.
- In a medium bowl, whisk together flour, baking soda, baking powder, and salt. Set aside.
- In a large mixing bowl, cream butter, brown sugar, and granulated sugar until fluffy.
- Beat in the egg and vanilla extract.
- Gradually add dry ingredients into the wet mixture until combined.
- Fold in Reese’s Pieces.
- Scoop a tablespoon of cookie dough, flatten it, and place a frozen peanut butter scoop in the center. Wrap the dough around it to form a ball.
- Place cookie balls onto a lined baking sheet.
- Bake at 350°F (175°C) for 9–11 minutes, until golden at the edges.
- Cool for 5 minutes before transferring to a wire rack. Serve warm or store for later.
Notes
- Freeze the peanut butter filling before stuffing to prevent leaking.
- Add extra Reese’s Pieces on top before baking for a prettier finish.
- For softer cookies, slightly underbake and let them finish setting on the tray.
