Description

A creamy and comforting one-pot meal made with tender chicken, mushrooms, orzo pasta, and a rich, flavorful sauce.


Ingredients

  • 1 ½ pounds boneless, skinless chicken thighs
  • Salt and black pepper, to taste
  • 2 tablespoons unsalted butter
  • 8 ounces cremini mushrooms, halved
  • 2 large shallots, diced
  • 3 cloves garlic, minced
  • 4 teaspoons fresh thyme
  • 2 tablespoons all-purpose flour
  • 3 cups chicken stock
  • 1 ½ teaspoons Dijon mustard
  • 1 cup orzo pasta
  • 4 cups baby spinach
  • ⅓ cup grated Parmesan cheese
  • ¼ cup heavy cream
  • 2 tablespoons fresh parsley


Instructions

  1. Season chicken with salt and pepper.
  2. Melt butter in a pot and sear chicken until golden; remove.
  3. Cook mushrooms until browned.
  4. Add shallots, garlic, and thyme; sauté until fragrant.
  5. Stir in flour to coat.
  6. Add chicken stock and Dijon mustard; mix well.
  7. Stir in orzo and return chicken to pot.
  8. Simmer until orzo is tender and chicken cooked through.
  9. Stir in spinach, Parmesan, and cream.
  10. Garnish with parsley and serve warm.

Notes

  • Add extra broth when reheating to keep it creamy.
  • Use chicken breast for a leaner option.
