Ingredients
- 1 ½ pounds boneless, skinless chicken thighs
- Salt and black pepper, to taste
- 2 tablespoons unsalted butter
- 8 ounces cremini mushrooms, halved
- 2 large shallots, diced
- 3 cloves garlic, minced
- 4 teaspoons fresh thyme
- 2 tablespoons all-purpose flour
- 3 cups chicken stock
- 1 ½ teaspoons Dijon mustard
- 1 cup orzo pasta
- 4 cups baby spinach
- ⅓ cup grated Parmesan cheese
- ¼ cup heavy cream
- 2 tablespoons fresh parsley
Instructions
- Season chicken with salt and pepper.
- Melt butter in a pot and sear chicken until golden; remove.
- Cook mushrooms until browned.
- Add shallots, garlic, and thyme; sauté until fragrant.
- Stir in flour to coat.
- Add chicken stock and Dijon mustard; mix well.
- Stir in orzo and return chicken to pot.
- Simmer until orzo is tender and chicken cooked through.
- Stir in spinach, Parmesan, and cream.
- Garnish with parsley and serve warm.
