Ingredients
- 2 lb cod fillets
- ⅓ cup mayonnaise
- ⅓ cup Parmigiano Reggiano cheese, freshly grated
- 2 tablespoons fresh parsley, chopped
- 2 tablespoons fresh basil, chopped
- 2 cloves garlic, grated
- Salt, to taste
- Black pepper, to taste
Instructions
- Preheat oven to 400°F (200°C). Lightly grease a baking dish.
- Pat cod fillets dry and season lightly with salt and black pepper.
- Arrange cod in a single layer in the prepared baking dish.
- In a bowl, mix mayonnaise, Parmesan cheese, parsley, basil, and garlic until smooth.
- Spread the Parmesan mixture evenly over each cod fillet.
- Bake uncovered for 18–22 minutes, until fish flakes easily and topping is lightly golden.
- Optional: Broil for 1–2 minutes for extra browning, watching closely.
