Description

Oven-baked cod topped with a creamy Parmesan, garlic, and fresh herb crust that stays moist and flavorful.


Ingredients

  • 2 lb cod fillets
  • ⅓ cup mayonnaise
  • ⅓ cup Parmigiano Reggiano cheese, freshly grated
  • 2 tablespoons fresh parsley, chopped
  • 2 tablespoons fresh basil, chopped
  • 2 cloves garlic, grated
  • Salt, to taste
  • Black pepper, to taste


Instructions

  1. Preheat oven to 400°F (200°C). Lightly grease a baking dish.
  2. Pat cod fillets dry and season lightly with salt and black pepper.
  3. Arrange cod in a single layer in the prepared baking dish.
  4. In a bowl, mix mayonnaise, Parmesan cheese, parsley, basil, and garlic until smooth.
  5. Spread the Parmesan mixture evenly over each cod fillet.
  6. Bake uncovered for 18–22 minutes, until fish flakes easily and topping is lightly golden.
  7. Optional: Broil for 1–2 minutes for extra browning, watching closely.
