Description

Creamy peanut butter balls dipped in rich chocolate, these classic Peanut Butter Buckeyes are the perfect no-bake treat for holidays, parties, or anytime you need a sweet bite.


Ingredients

  • 1 ½ cups creamy peanut butter (no-stir type, not natural)
  • ½ cup unsalted butter, softened
  • 1 tsp vanilla extract
  • 34 cups powdered sugar (as needed for consistency)
  • 2 cups semi-sweet or dark chocolate chips
  • 1 tbsp coconut oil or shortening (optional, for smooth coating)


Instructions

Prepare the Peanut Butter Base

  • In a large bowl, beat together peanut butter, butter, and vanilla until smooth.
  • Gradually mix in powdered sugar until a thick, rollable dough forms.

Shape the Buckeyes

  • Roll into 1-inch balls and place on a parchment-lined baking sheet.
  • Chill in the refrigerator or freezer for at least 30 minutes.

Melt the Chocolate

  • In a microwave-safe bowl, melt chocolate chips with coconut oil in 20-second intervals, stirring until smooth.

Dip the Buckeyes

  • Insert a toothpick into each peanut butter ball. Dip into melted chocolate, leaving a small circle of peanut butter exposed on top.
  • Place back on the tray.

Chill and Set

  • Refrigerate until chocolate is firm. Remove toothpicks and smooth over holes if desired.
