Ingredients
- 1 can (20 oz) crushed pineapple, well-drained
- 1 can (14 oz) sweetened condensed milk
- 2 cups graham cracker crumbs (or crushed digestive biscuits)
- ½ cup grated cheese (optional)
- 2 tablespoons melted butter
- 1 ½ cups desiccated coconut (for rolling)
- Optional: chopped nuts or raisins
Instructions
- Prepare the Base: In a large mixing bowl, combine the drained pineapple, condensed milk, and melted butter. Stir well until blended.
- Add Dry Ingredients: Slowly add the graham crumbs, mixing until a thick, sticky dough forms.
- Enhance the Flavor: Fold in grated cheese, raisins, or nuts (optional).
- Shape the Balls: Scoop out portions of the mixture and roll into small bite-sized balls.
- Coat with Coconut: Roll each ball in desiccated coconut until fully covered.
- Chill: Place on a tray lined with parchment paper and refrigerate for at least 1 hour before serving.
Notes
- Drain pineapple thoroughly to avoid a soggy mixture.
