Description

Sweet, creamy, and bursting with tropical flavor — these Pineapple Christmas Balls are the perfect no-bake holiday dessert! Easy to make, budget-friendly, and great for gifting.

Ingredients

  • 1 can (20 oz) crushed pineapple, well-drained
  • 1 can (14 oz) sweetened condensed milk
  • 2 cups graham cracker crumbs (or crushed digestive biscuits)
  • ½ cup grated cheese (optional)
  • 2 tablespoons melted butter
  • 1 ½ cups desiccated coconut (for rolling)
  • Optional: chopped nuts or raisins

Instructions

  1. Prepare the Base: In a large mixing bowl, combine the drained pineapple, condensed milk, and melted butter. Stir well until blended.
  2. Add Dry Ingredients: Slowly add the graham crumbs, mixing until a thick, sticky dough forms.
  3. Enhance the Flavor: Fold in grated cheese, raisins, or nuts (optional).
  4. Shape the Balls: Scoop out portions of the mixture and roll into small bite-sized balls.
  5. Coat with Coconut: Roll each ball in desiccated coconut until fully covered.
  6. Chill: Place on a tray lined with parchment paper and refrigerate for at least 1 hour before serving.

Notes

  • Drain pineapple thoroughly to avoid a soggy mixture.
  • Add more graham crumbs if the mixture is too sticky.
  • Chill the mixture for 10–15 minutes before rolling for easier shaping.
  • Store in an airtight container to maintain freshness.
  • For gifting, place in mini cupcake liners or wrap individually in candy wrappers.
