Ingredients

6 cups mixed greens
1 cup pomegranate seeds
1 large apple, thinly sliced (Honeycrisp or Fuji)
1 avocado, sliced
1 cup candied walnuts
½ cup blue cheese, crumbled
Balsamic Vinaigrette
- ¼ cup extra-virgin olive oil
- 2 tablespoons balsamic vinegar
- 1 teaspoon Dijon mustard
- 1 teaspoon honey or maple syrup
- Pinch of salt
- Pinch of black pepper
Instructions
- Prepare the greens: Add mixed greens to a large salad bowl or serving platter.
- Add toppings: Layer pomegranate seeds, apple slices, avocado, candied walnuts, and blue cheese over the greens.
- Make the vinaigrette: Whisk or shake together olive oil, balsamic vinegar, Dijon, honey, salt, and pepper until smooth.
