Description

A bright holiday salad with juicy pomegranate seeds, apples, candied walnuts, and creamy blue cheese tossed in a simple balsamic vinaigrette.


Ingredients

Salad

  • 6 cups mixed greens

  • 1 cup pomegranate seeds

  • 1 large apple, thinly sliced (Honeycrisp or Fuji)

  • 1 avocado, sliced

  • 1 cup candied walnuts

  • ½ cup blue cheese, crumbled

Balsamic Vinaigrette

  • ¼ cup extra-virgin olive oil
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey or maple syrup
  • Pinch of salt
  • Pinch of black pepper


Instructions

  1. Prepare the greens: Add mixed greens to a large salad bowl or serving platter.
  2. Add toppings: Layer pomegranate seeds, apple slices, avocado, candied walnuts, and blue cheese over the greens.
  3. Make the vinaigrette: Whisk or shake together olive oil, balsamic vinegar, Dijon, honey, salt, and pepper until smooth.
