Description
Tender pork paired with a creamy Dijon mustard sauce for a flavorful and elegant dinner that’s simple enough for weeknights and special enough for guests.
Ingredients
For the Pork:
- 1½ lbs (680g) pork tenderloin, trimmed
- 1 tbsp olive oil
- 1 tsp salt
- ½ tsp black pepper
- 1 tsp garlic powder
For the Dijon Cream Sauce:
- 1 tbsp unsalted butter
- 2 cloves garlic, minced
- ½ cup chicken broth (or white wine)
- 1 cup heavy cream (or half-and-half)
- 2 tbsp Dijon mustard
- 1 tsp fresh thyme leaves (or ½ tsp dried thyme)
- Salt & pepper, to taste
Instructions
- Preheat oven to 400°F (200°C). Pat pork dry and season with salt, pepper, and garlic powder.
- Heat olive oil in an oven-safe skillet. Sear pork on all sides until browned.
- Transfer skillet to oven and roast for 15–20 minutes or until internal temperature reaches 145°F (63°C). Rest for 5–10 minutes.
- In the same pan, melt butter, add garlic, and cook until fragrant.
- Deglaze with broth or wine. Stir in cream, Dijon mustard, thyme, salt, and pepper. Simmer until thickened.
- Slice pork and serve with warm Dijon cream sauce.
Notes
- Let pork rest before slicing for juicier results.
- For a lighter version, use half-and-half instead of cream.
- Add mushrooms or shallots for extra depth.
