Description

Flavorful and juicy chicken tacos made with homemade taco seasoning, fresh ingredients, and easy stovetop cooking.


Ingredients

Chicken:

  • 11.5 lbs chicken thighs or breast
  • 1.5 tbsp olive oil
  • 2 tbsp tomato paste
  • 2 tsp sugar
  • 1 cup chicken broth (divided)

Homemade Taco Seasoning:

  • 3 tbsp lime juice
  • 1 tbsp olive oil
  • 2 garlic cloves, minced
  • 2 tsp garlic powder
  • 2 tsp onion powder
  • 2 tsp dried oregano
  • 3 tsp cumin powder
  • 3 tsp paprika
  • 1/2 tsp cayenne pepper (optional)
  • 1 tsp salt
  • 1/2 tsp black pepper

To Serve:

  • Taco shells or tortillas
  • Diced tomato, onion, avocado
  • Fresh cilantro
  • Shredded lettuce
  • Shredded cheese
  • Sour cream


Instructions

  1. In a bowl, mix lime juice, olive oil, garlic, and all seasoning spices.
  2. Heat olive oil in a skillet and cook chicken until lightly browned.
  3. Add tomato paste and cook for 1 minute.
  4. Pour in half the broth and add seasoning mixture; stir to coat.
  5. Cover and simmer until chicken is cooked through.
  6. Shred chicken and return to pan with remaining broth.
  7. Let simmer briefly to absorb flavors.
  8. Serve in warm tortillas with desired toppings.

Notes

  • Use chicken thighs for extra juiciness.
  • Adjust cayenne for preferred spice level.
  • Add a splash of broth when reheating to keep chicken moist.
