Flavorful and juicy chicken tacos made with homemade taco seasoning, fresh ingredients, and easy stovetop cooking.
Ingredients
Chicken:
- 1–1.5 lbs chicken thighs or breast
- 1.5 tbsp olive oil
- 2 tbsp tomato paste
- 2 tsp sugar
- 1 cup chicken broth (divided)
Homemade Taco Seasoning:
- 3 tbsp lime juice
- 1 tbsp olive oil
- 2 garlic cloves, minced
- 2 tsp garlic powder
- 2 tsp onion powder
- 2 tsp dried oregano
- 3 tsp cumin powder
- 3 tsp paprika
- 1/2 tsp cayenne pepper (optional)
- 1 tsp salt
- 1/2 tsp black pepper
To Serve:
- Taco shells or tortillas
- Diced tomato, onion, avocado
- Fresh cilantro
- Shredded lettuce
- Shredded cheese
- Sour cream
Instructions
- In a bowl, mix lime juice, olive oil, garlic, and all seasoning spices.
- Heat olive oil in a skillet and cook chicken until lightly browned.
- Add tomato paste and cook for 1 minute.
- Pour in half the broth and add seasoning mixture; stir to coat.
- Cover and simmer until chicken is cooked through.
- Shred chicken and return to pan with remaining broth.
- Let simmer briefly to absorb flavors.
- Serve in warm tortillas with desired toppings.
Notes
- Use chicken thighs for extra juiciness.
- Adjust cayenne for preferred spice level.
- Add a splash of broth when reheating to keep chicken moist.
