Ingredients
- 2½ tablespoons olive oil or avocado oil
- 4 fully cooked sausages, sliced into circles ¼ inch thick
- 2 medium zucchinis, cubed
- 1 onion, cut into ¾ inch pieces
- 1 bell pepper, cut into ¾ inch pieces
- ½ teaspoon salt
- ½ teaspoon dried oregano
- ½ teaspoon dried basil
- ¼ teaspoon garlic powder
- ¼ teaspoon onion powder
- ¼ teaspoon black pepper
- 1 teaspoon garlic, minced
Instructions
- Heat oil in a large skillet over medium-high heat. Add the sausage and cook until browned, about 4-5 minutes. Remove and set aside.
- Add a bit more oil if needed. Sauté onion, bell pepper, and zucchini for 5-6 minutes until softened.
- Stir in the salt, oregano, basil, garlic powder, onion powder, black pepper, and minced garlic. Mix well.
- Add the sausage back to the skillet and cook for 3-4 minutes, stirring occasionally.
- Serve immediately.

- Add extra vegetables like spinach or mushrooms for more flavor.
- Swap sausage for turkey or chicken sausage for a leaner option.
