Description

Ingredients

  • 2½ tablespoons olive oil or avocado oil
  • 4 fully cooked sausages, sliced into circles ¼ inch thick
  • 2 medium zucchinis, cubed
  • 1 onion, cut into ¾ inch pieces
  • 1 bell pepper, cut into ¾ inch pieces
  • ½ teaspoon salt
  • ½ teaspoon dried oregano
  • ½ teaspoon dried basil
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • ¼ teaspoon black pepper
  • 1 teaspoon garlic, minced


Instructions

  1. Heat oil in a large skillet over medium-high heat. Add the sausage and cook until browned, about 4-5 minutes. Remove and set aside.
  2. Add a bit more oil if needed. Sauté onion, bell pepper, and zucchini for 5-6 minutes until softened.
  3. Stir in the salt, oregano, basil, garlic powder, onion powder, black pepper, and minced garlic. Mix well.
  4. Add the sausage back to the skillet and cook for 3-4 minutes, stirring occasionally.
  5. Serve immediately.
