Ingredients
- 1 tablespoon olive oil
- 13.5 oz andouille sausage, sliced into ¼-inch rounds
- 4 russet potatoes, peeled and cut into bite-sized pieces
- 1 cup diced bell pepper (red or green)
- 1 cup diced onion
- ½ cup diced celery
- ½ cup sliced carrots
- 1 tablespoon minced garlic
- 1 tablespoon Cajun seasoning
- 1 teaspoon salt
- 1 teaspoon black pepper
- 3 cups chicken broth
- 1 cup milk
- ½ cup whipping cream
- 1 cup shredded cheddar cheese
- Sliced green onions, for serving
- Tabasco sauce, for serving
Instructions
- Heat olive oil in a skillet over medium heat and lightly brown the andouille sausage for 3–4 minutes.
- Transfer sausage to the slow cooker along with potatoes, bell pepper, onion, celery, carrots, and garlic.
- Add Cajun seasoning, salt, and black pepper, then pour in chicken broth. Stir to combine.
- Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until potatoes are tender.
- Mash some of the potatoes in the slow cooker to thicken the soup.
- Stir in milk, whipping cream, and cheddar cheese. Cook on LOW for 20–30 minutes until creamy.
- Serve hot, topped with green onions and Tabasco sauce if desired.

- Mash more potatoes for a thicker soup or add extra broth for a lighter texture.
- Adjust Cajun seasoning to control spice level.
- Smoked sausage can be substituted if andouille is unavailable.
