Ingredients
- 2 boneless, skinless chicken breasts
- 1 cup long-grain white rice (uncooked)
- 1 can (10.5 oz) cream of chicken soup
- 2 cups chicken broth
- 1½ cups shredded cheddar cheese (divided)
Optional Add-ins:
- 1 cup frozen peas or mixed vegetables
- ½ tsp garlic powder or paprika for extra flavor
- Salt and pepper, to taste
Instructions
- Prepare your slow cooker: Lightly grease the slow cooker with non-stick spray or butter.
- Layer the ingredients: Add uncooked rice and chicken broth to the bottom of the cooker. Stir to combine, then place chicken breasts on top.
- Add the soup: Spread the cream of chicken soup evenly over the chicken. Do not stir — this allows the rice to cook evenly.
- Cook: Cover and cook on Low for 6 hours or High for 3 hours, until the chicken is fully cooked and the rice is tender.
- Add cheese: Shred the chicken with two forks right in the slow cooker, then stir in 1 cup of cheddar cheese until melted and creamy.
- Serve: Top with the remaining cheese, cover for 5 minutes to melt, and serve warm.
