Description

Slow Cooker Coconut Lentil Soup is a creamy, plant-based soup made with lentils, coconut milk, and warming spices. This cozy slow cooker recipe is easy to make and perfect for meal prep or chilly evenings.


Ingredients

  • 1.5 cups dried brown lentils (or green)
  • 1 cup diced onion (from ½ large onion)
  • 3 large carrots, peeled and diced (about 1.5 cups)
  • 2 tablespoons minced fresh ginger (or ginger paste)
  • 4 garlic cloves, minced or pressed
  • 2 teaspoons ground cumin
  • ½ teaspoon salt
  • 14.5 oz can diced tomatoes
  • 14.5 oz can fire-roasted diced tomatoes
  • 13.5 oz can full-fat coconut milk (unsweetened)
  • 6 cups vegetable broth
  • Juice of 1 lime (optional, for serving)


Instructions

  • Rinse lentils and prepare vegetables.
  • Add all ingredients (except lime juice) to the slow cooker.
  • Stir to combine.
  • Cook on LOW for 7–8 hours or HIGH for 4–5 hours, until lentils are soft.
  • Stir in lime juice before serving, if using.
  • Serve warm and garnish with fresh herbs if desired.

Notes

  • Add greens like spinach or kale in the last 30 minutes of cooking.
  • Adjust spices or blend a portion for a thicker texture.
