Ingredients
- 1.5 cups dried brown lentils (or green)
- 1 cup diced onion (from ½ large onion)
- 3 large carrots, peeled and diced (about 1.5 cups)
- 2 tablespoons minced fresh ginger (or ginger paste)
- 4 garlic cloves, minced or pressed
- 2 teaspoons ground cumin
- ½ teaspoon salt
- 14.5 oz can diced tomatoes
- 14.5 oz can fire-roasted diced tomatoes
- 13.5 oz can full-fat coconut milk (unsweetened)
- 6 cups vegetable broth
- Juice of 1 lime (optional, for serving)
Instructions
- Rinse lentils and prepare vegetables.
- Add all ingredients (except lime juice) to the slow cooker.
- Stir to combine.
- Cook on LOW for 7–8 hours or HIGH for 4–5 hours, until lentils are soft.
- Stir in lime juice before serving, if using.
- Serve warm and garnish with fresh herbs if desired.
