Description

Ingredients

  • 2 lbs beef bites (stew beef or sirloin)
  • 1 ½ lbs baby potatoes, halved
  • 4 tbsp unsalted butter
  • 5 garlic cloves, minced
  • 1 cup beef broth
  • 2 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp onion powder
  • 1 tsp dried thyme
  • Salt & pepper to taste
  • Fresh parsley for garnish


Instructions

  1. Pat beef bites dry and season with salt, pepper, and paprika.
  2. Heat olive oil in a skillet and brown beef on all sides.
  3. Melt butter in a saucepan, add minced garlic, and cook until fragrant.
  4. Place potatoes in the bottom of the slow cooker, top with beef, and pour garlic butter over everything.
  5. Add beef broth, onion powder, and thyme.
  6. Cover and cook on low for 6–8 hours or high for 3–4 hours.
  7. Garnish with fresh parsley before serving.

  • For extra flavor, deglaze the skillet with a splash of beef broth after browning the beef and add it to the slow cooker.
