Description

Slow Cooker Southern Green Beans feature fresh green beans slowly simmered with smoked ham hocks, onion, and savory broth until perfectly tender. Finished with a splash of vinegar for balance, they’re a comforting Southern classic.

Ingredients

  • 2 lbs fresh green beans, trimmed
  • 2 smoked ham hocks
  • 6 cups low-sodium chicken stock
  • 2 teaspoons granulated garlic
  • ¼ yellow onion, diced
  • ½ tablespoon kosher salt
  • 1 teaspoon black pepper
  • ½ teaspoon red pepper flakes or hot sauce
  • 1 teaspoon red wine vinegar

Instructions

  1. Trim and rinse green beans.
  2. Add beans and onion to slow cooker.
  3. Place ham hocks on top.
  4. Pour in chicken stock.
  5. Add garlic, salt, pepper, and red pepper flakes.
  6. Cook on low 6–8 hours or high 4–5 hours until tender.
  7. Remove ham hocks, shred meat, and return to pot if desired.
  8. Stir in red wine vinegar and adjust seasoning.

Notes

  • Ensure beans are mostly submerged in broth.
  • Add vinegar only at the end to maintain brightness.
  • Cooking longer on low enhances flavor depth.
