Description
Experience the authentic taste of Italy with this quick and easy Spaghetti Aglio e Olio recipe — made with garlic, olive oil, and chili flakes. A classic, flavorful pasta ready in just 20 minutes!
Ingredients
- 400 g (14 oz) spaghetti
- 6 garlic cloves, thinly sliced
- ½ cup extra-virgin olive oil
- 1 tsp red chili flakes (adjust to taste)
- Salt, to taste
- Freshly ground black pepper, to taste
- ¼ cup fresh parsley, finely chopped
- Grated Parmesan or Pecorino cheese (optional)
Optional Add-ins: Lemon zest, shrimp, mushrooms, spinach, or anchovies for extra flavor.
Instructions
- Cook the spaghetti: Bring a large pot of salted water to a boil. Add spaghetti and cook until al dente. Reserve 1 cup of pasta water before draining.
- Infuse the oil: In a large skillet, heat olive oil over medium heat. Add garlic slices and cook until light golden — be careful not to burn.
- Add heat: Stir in red chili flakes and cook for about 30 seconds to release their flavor.
- Combine: Add drained spaghetti directly to the skillet. Toss well to coat the pasta in the garlic oil. Add a splash of reserved pasta water if needed to create a light sauce.
- Season and serve: Add salt, pepper, and fresh parsley. Toss again and serve warm with grated Parmesan if desired.
Notes
- Don’t burn the garlic: Golden, not brown, is key to getting that nutty aroma without bitterness.
- Use good olive oil: Since it’s the main ingredient, choose a quality extra-virgin olive oil.
- Add lemon zest: A sprinkle of zest brightens the dish and enhances the flavor.
- Customize it: Toss in shrimp, anchovies, or vegetables for a twist.
- Serve immediately: This dish tastes best fresh from the pan.
