Ingredients

  • 400 g (14 oz) spaghetti
  • 6 garlic cloves, thinly sliced
  • ½ cup extra-virgin olive oil
  • 1 tsp red chili flakes (adjust to taste)
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • ¼ cup fresh parsley, finely chopped
  • Grated Parmesan or Pecorino cheese (optional)

Optional Add-ins: Lemon zest, shrimp, mushrooms, spinach, or anchovies for extra flavor.


Instructions

  1. Cook the spaghetti: Bring a large pot of salted water to a boil. Add spaghetti and cook until al dente. Reserve 1 cup of pasta water before draining.
  2. Infuse the oil: In a large skillet, heat olive oil over medium heat. Add garlic slices and cook until light golden — be careful not to burn.
  3. Add heat: Stir in red chili flakes and cook for about 30 seconds to release their flavor.
  4. Combine: Add drained spaghetti directly to the skillet. Toss well to coat the pasta in the garlic oil. Add a splash of reserved pasta water if needed to create a light sauce.
