Description

A quick and flavorful Loaded Taco Skillet made with ground beef, beans, veggies, and melted cheese. A one-pan dinner that’s easy, hearty, and perfect for family taco night.


Ingredients

  • 1 lb ground beef (or chicken/turkey)
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 cup corn kernels
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (14.5 oz) diced tomatoes
  • 2 tbsp taco seasoning
  • 1 ½ cups shredded cheddar or Mexican blend cheese
  • 1 cup tortilla chips, crushed
  • Optional toppings: sour cream, guacamole, salsa, jalapeños, cilantro


Instructions

  1. Cook ground beef in a large skillet over medium heat until browned. Drain excess fat.
  2. Add onion, garlic, and bell pepper. Sauté until softened, about 5 minutes.
  3. Stir in taco seasoning, corn, black beans, and diced tomatoes. Simmer for 7 minutes.
  4. Sprinkle cheese over the skillet, cover, and cook until melted.
  5. Top with crushed tortilla chips and serve with your favorite toppings.

Notes

  • Swap beef for chicken, turkey, or a vegetarian protein.
  • Add jalapeños or hot sauce for extra spice.
