Description

Spinach Ricotta Chicken – Tender chicken breasts stuffed with creamy ricotta, fresh spinach, and parmesan, baked in marinara sauce for a flavorful and comforting dinner. Perfect for weeknights or special occasions.


Ingredients

  • 1 ½ lb chicken breast (3–4), pounded to 1 inch thickness
  • ½ tsp cracked pepper
  • ½ tsp sea salt
  • 3 garlic cloves, minced (split)
  • 1 cup ricotta cheese
  • 1 cup fresh chopped spinach
  • ½ cup parmesan cheese, shredded
  • 1 tsp Italian seasoning
  • ¼ tsp crushed red pepper
  • 1 ½ cups marinara sauce
  • Extra parmesan for topping (¼–⅓ cup)


Instructions

  1. Preheat oven to 375°F (190°C) and grease a baking dish.
  2. Season chicken with salt and pepper.
  3. Mix ricotta, spinach, half garlic, parmesan, Italian seasoning, and red pepper.
  4. Slice pockets in chicken and fill with ricotta mixture.
  5. Spread marinara on dish, place chicken, top with remaining sauce and parmesan.
  6. Bake 25–30 min until chicken reaches 165°F (74°C).
  7. Rest 5 min before serving.

Notes

  • Use toothpicks to secure filling if needed.
  • Freeze cooked chicken for up to 2 months.
  • Serve with pasta, roasted veggies, or salad.
