Description
Spinach Ricotta Chicken – Tender chicken breasts stuffed with creamy ricotta, fresh spinach, and parmesan, baked in marinara sauce for a flavorful and comforting dinner. Perfect for weeknights or special occasions.
Ingredients
- 1 ½ lb chicken breast (3–4), pounded to 1 inch thickness
- ½ tsp cracked pepper
- ½ tsp sea salt
- 3 garlic cloves, minced (split)
- 1 cup ricotta cheese
- 1 cup fresh chopped spinach
- ½ cup parmesan cheese, shredded
- 1 tsp Italian seasoning
- ¼ tsp crushed red pepper
- 1 ½ cups marinara sauce
- Extra parmesan for topping (¼–⅓ cup)
Instructions
- Preheat oven to 375°F (190°C) and grease a baking dish.
- Season chicken with salt and pepper.
- Mix ricotta, spinach, half garlic, parmesan, Italian seasoning, and red pepper.
- Slice pockets in chicken and fill with ricotta mixture.
- Spread marinara on dish, place chicken, top with remaining sauce and parmesan.
- Bake 25–30 min until chicken reaches 165°F (74°C).
- Rest 5 min before serving.
Notes
- Use toothpicks to secure filling if needed.
- Freeze cooked chicken for up to 2 months.
- Serve with pasta, roasted veggies, or salad.
