Description

These Spooky Eyeball Tacos bring a playful twist to taco night, perfect for Halloween parties or themed dinners. With simple ingredients and a creepy-cute presentation, these tacos are as fun to make as they are to eat.

Ingredients

  • 1 lb ground beef (or chicken/turkey)
  • 1 packet taco seasoning (or homemade blend)
  • ½ cup water
  • 8 small flour or corn tortillas
  • 1 cup shredded cheese (cheddar or blend)
  • 1 cup sour cream
  • 8 grape or cherry tomatoes, halved
  • 16 sliced black olives
  • Shredded lettuce
  • Salsa or hot sauce (optional)

Instructions

  1. Cook ground beef in a skillet over medium heat until browned. Drain excess fat.
  2. Add taco seasoning and water, simmer until thickened.
  3. Warm tortillas in skillet or microwave.
  4. Fill tortillas with meat, lettuce, and cheese.
  5. Create “eyeballs” by placing a tomato half on each taco. Top with a dollop of sour cream and an olive slice.
  6. Optional: drizzle salsa or hot sauce around the eyeballs for a spooky touch.

Notes

  • Use rotisserie chicken or plant-based crumbles for variations.
  • Add red pepper strips as “veins” for extra spooky detail.
  • Let kids decorate their own tacos for a fun Halloween activity.
  • Assemble eyeballs just before serving to keep them fresh.
