Ingredients
- 2 cups fresh strawberries, hulled and chopped
- ¼ cup granulated sugar (adjust to taste)
- 1 teaspoon lemon juice
- 1 cup heavy whipping cream (chilled)
- 1 teaspoon vanilla extract
- Optional garnish: whipped cream, sliced strawberries, mint leaves, or white chocolate curls
Instructions
- Blend the strawberries: Combine strawberries, sugar, and lemon juice in a blender. Blend until smooth and taste for sweetness.
- Thicken the puree: Pour into a saucepan and simmer on medium heat for about 5 minutes, stirring occasionally, until slightly thickened. Let cool completely.
- Whip the cream: In a chilled bowl, beat the cold heavy cream and vanilla until soft peaks form.
- Fold together: Gently fold the cooled strawberry puree into the whipped cream using a spatula. Mix lightly until combined — don’t overmix.
