Crispy baked mashed potato nests filled with savory meat, melted cheese, and green onions. An easy, comforting dish that works for brunch, dinner, or entertaining.
Ingredients
- 2 lbs russet potatoes, peeled and diced
- ½ cup milk
- 4 tablespoons unsalted butter
- 1 teaspoon salt, plus more to taste
- ½ teaspoon freshly ground black pepper
- 1 tablespoon olive oil (for greasing pan)
- 1 cup cooked ground beef or sausage
- 1 cup shredded cheddar or mozzarella cheese
- ¼ cup chopped green onions
Instructions
- Peel and dice potatoes, then boil in salted water until fork-tender, about 15–20 minutes. Drain well.
- Mash potatoes with milk, butter, salt, and pepper until smooth but firm.
- Preheat oven to 375°F (190°C). Grease a muffin tin with olive oil.
- Scoop mashed potatoes into muffin cups and press to form nests with wells in the center.
- Fill each nest with cooked meat, cheese, and green onions.
- Bake for 15–20 minutes until edges are golden and cheese is melted.
- Cool slightly, remove carefully, and serve warm.

- Use leftover mashed potatoes for faster prep.
