Description

Crispy baked mashed potato nests filled with savory meat, melted cheese, and green onions. An easy, comforting dish that works for brunch, dinner, or entertaining.


Ingredients

  • 2 lbs russet potatoes, peeled and diced
  • ½ cup milk
  • 4 tablespoons unsalted butter
  • 1 teaspoon salt, plus more to taste
  • ½ teaspoon freshly ground black pepper
  • 1 tablespoon olive oil (for greasing pan)
  • 1 cup cooked ground beef or sausage
  • 1 cup shredded cheddar or mozzarella cheese
  • ¼ cup chopped green onions


Instructions

  1. Peel and dice potatoes, then boil in salted water until fork-tender, about 15–20 minutes. Drain well.
  2. Mash potatoes with milk, butter, salt, and pepper until smooth but firm.
  3. Preheat oven to 375°F (190°C). Grease a muffin tin with olive oil.
  4. Scoop mashed potatoes into muffin cups and press to form nests with wells in the center.
  5. Fill each nest with cooked meat, cheese, and green onions.
  6. Bake for 15–20 minutes until edges are golden and cheese is melted.
  7. Cool slightly, remove carefully, and serve warm.
