Description

Ingredients

  • 1 cup pitted dates (soaked in warm water for 10 minutes)
  • ½ cup sunflower seeds (lightly toasted)
  • 1 cup rolled oats
  • ¾ cup whole wheat flour
  • ¼ cup honey or maple syrup
  • ¼ cup melted butter or coconut oil
  • 1 large egg (or flax egg for vegan version)
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 tsp vanilla extract
  • Optional: ¼ cup dark chocolate chips or shredded coconut


Instructions

  1. Preheat Oven: Set oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Prepare Dates: Soak the pitted dates in warm water for 10 minutes. Blend them into a smooth paste.
  3. Mix Wet Ingredients: In a bowl, whisk together melted butter (or coconut oil), date paste, honey, and vanilla extract.
  4. Combine Dry Ingredients: In another bowl, mix flour, oats, baking soda, and salt.
  5. Combine Mixtures: Gradually mix the dry ingredients into the wet mixture. Fold in sunflower seeds (and any optional add-ins).
  6. Shape Cookies: Scoop dough into tablespoon-sized balls, place them on the baking sheet, and gently flatten.
  7. Bake: Bake for 10–12 minutes until edges turn golden brown.
  8. Cool & Serve: Allow cookies to cool for 5 minutes before transferring to a wire rack. Enjoy warm or store for later!
