Ingredients
- 1 cup pitted dates (soaked in warm water for 10 minutes)
- ½ cup sunflower seeds (lightly toasted)
- 1 cup rolled oats
- ¾ cup whole wheat flour
- ¼ cup honey or maple syrup
- ¼ cup melted butter or coconut oil
- 1 large egg (or flax egg for vegan version)
- ½ tsp baking soda
- ½ tsp salt
- 1 tsp vanilla extract
- Optional: ¼ cup dark chocolate chips or shredded coconut
Instructions
- Preheat Oven: Set oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Prepare Dates: Soak the pitted dates in warm water for 10 minutes. Blend them into a smooth paste.
- Mix Wet Ingredients: In a bowl, whisk together melted butter (or coconut oil), date paste, honey, and vanilla extract.
- Combine Dry Ingredients: In another bowl, mix flour, oats, baking soda, and salt.
- Combine Mixtures: Gradually mix the dry ingredients into the wet mixture. Fold in sunflower seeds (and any optional add-ins).
- Shape Cookies: Scoop dough into tablespoon-sized balls, place them on the baking sheet, and gently flatten.
- Bake: Bake for 10–12 minutes until edges turn golden brown.
- Cool & Serve: Allow cookies to cool for 5 minutes before transferring to a wire rack. Enjoy warm or store for later!
